Shinriki rice is an heirloom rice variety local to Kumamoto brought back by just one grain from near extinction, and we are eternally reaping the benefits. We don't have a ton of sake available from Kyushu, but this stunner from Kumamoto's Chiyonosono is just fantastic. A rich, mellow, full flavored sake with fresh cut green grass aromas and hints of tropical fruits on the nose. This is certainly not a fuddy duddy
